bean-quesadillas.jpgI made vegetarian bean quesadillas for my Saturday’s lunch. Recipe can be found here. I love this because it reminds me of California’s burritos I used to buy at the weekend street fair. It’s not quite the same but it’s still tasty and easy to do.

    hmm that looks quite yummy, but do you think it would still taste good without the “1 jalapeno chili, minced”

    Hot stuff makes my eyes water a lot :(

    Bobby, Lol. Are you crying? :P Actually, I skipped the jalapeno chili. I can’t eat spicy all the time.

    That looks delish, but more like an enchilada than a quesadilla, but still yummy.

    For the people worried about the spicy of the jalapeno, if you remove the seeds and the ribs from the inside pepper, you take a lot of the heat out of the pepper.
